cela d\u00e9pend cependant de la teneur en eau du fruit &#8211; par exemple, les melons contiennent environ 5% de sucre, tandis que les bananes en contiennent 20%. <\/p>\n\n\n\n<p>Les fruits d\u00e9shydrat\u00e9s sont plus riches en sucre &#8211; en moyenne, environ 70% de leur poids &#8211; car leur liquide est \u00e9vapor\u00e9 et les sucres (entre autres composants) concentr\u00e9s.<\/p>\n\n\n\n<p>Certains l\u00e9gumes sont en effet <em>riches en huiles consid\u00e9r\u00e9es comme b\u00e9n\u00e9fiques<\/em>, comme les noix qui contiennent 45% de graisses dont des acides gras om\u00e9ga 3 et 6, qui sont \u00e9galement pr\u00e9sents dans certains types de fruits frais comme 16% dans l&rsquo;avocat et 30% en noix de coco<\/p>\n\n\n\n<p>Les <strong>min\u00e9raux<\/strong> des fruits et l\u00e9gumes contribuent aux besoins nutritionnels recommand\u00e9s au quotidien, notamment en magn\u00e9sium, potassium, calcium, zinc, iode et fer; l&rsquo;absorption du fer par les l\u00e9gumes est en g\u00e9n\u00e9ral comprise entre 2 et 10% de la quantit\u00e9 du min\u00e9ral dans les l\u00e9gumes.<\/p>\n\n\n\n<p>La <strong>vitamine C<\/strong> favorise l&rsquo;absorption du fer des l\u00e9gumes &#8211;
