Ingredients for 4
  • 4 ripe peaches, sliced (500g)
  • 2 tbsp extra virgin olive oil
  • 1 fennel bulb, sliced lengthways (250g)
  • 1 blood orange, juice
  • 1 tbsp white wine vinegar
  • 100g rocket

Preparation time: 10 minutes
Cooking time: 10-12 minutes
Serves: 4

Method

Toss the peaches in ½ tbsp oil and griddle for 4-5 minutes, turning once.

Remove and toss the fennel slices in a further ½ tbsp oil and griddle for 5-6 minutes, turning once.

Whisk together the orange juice, vinegar and remaining 1 tbsp oil, season well.

Mix the rocket with the peach slices, fennel and dressing to serve.

Cooks tip: Delicious served with Italian charcuterie.
